The fruit was harvested in the early hours of the morning and pressed to tank. The juice was settled overnight and racked with a high proportion of juice solids prior to fermentation in stainless steel. The wine was kept on fermentation lees stirred regularly to build complexity and texture before bottling.
Excellent growing conditions were cut short due to a late frost event which resulted in a considerable reduction in yield.
