2017 Victrix Chardonnay
Planted in 1993, one of the older blocks on our estate was handpicked and then chilled overnight. The whole clusters were pressed to tank, allowed to settle and the unsulphured juice was transferred to French Oak. The fermentation was carried out by wild yeast and then the barrels were left to mature on lees for 8 months before bottling without finings.
A classic cool climate growing season with ample rainfall and cold temperatures was followed by a dry and sunny autumn. The result being a slow, even ripening with tremendous flavour development at low sugar levels.
Bright pale gold with emerald flecks.
Concentrated flavours of pink grapefruit and savoury nutty complexity through the palate. The richness of the fruit is carried by a creamy texture with a bright and lingering acid profile.
Whilst ready to drink now, this wine will gain in complexity over the next three to five years.
