2018 Late Harvest

All fermentation was carried out in stainless steel, at cool temperatures to preserve the freshness and vibrancy of the fruit. Upon reachijng the ideal balance of sweeyness and acidity, the ferment is arrested by chilling. The wine is composed of a careful blend of Semillon, Sauvignon Blanc, Verdelho, and Chardonnay.
Excellent growing conditions during spring led to healthy canopies and set the vineyard up beautifully for the rest of the season. A mild, yet very dry ripening season resulted in pristine fruit quality with abundance of flavour intensity.
