2017 Sauvignon Blanc
The estate grown fruit was harvested at optimal ripeness in the early hours of the morning. The juice was pressed to tank and one third was fermented in new and old French oak, the balance in stainless steel. The oak component was left on lees for 3 months before blending and bottling.
A classic cool climate growing season with ample rainfall and cold temperatures was followed by a dry and sunny autumn. The result being a slow, even ripening with tremendous flavour development at low sugar levels.
Brilliant pale straw with emerald flecks.
Intense flavours of pink grapefruit, guava, sugarsnap peas and subtle layers of vanilla are filled out by a creamy textural mid palate interwoven with bright refreshing acidity.
Whilst ready to drink now, this wine will gain in complexity over the next three to five years.
