2017 Shiraz Viognier
There are 6 small parcels of Shiraz of estate grown fruit which ripen at different times due to their varied locations. As Viognier is a late ripening white variety we are able to harvest the Viognier on the same day as a parcel of Shiraz. We press off the free run Viognier juice and then returned the skins to co-ferment with the Shiraz. The final wine, which is 2.5% Viognier, undergoes 12 months of maturation in French oak before bottling.
A classic cool climate growing season with ample rainfall and cold temperatures was followed by a dry and sunny Autumn. The result being a slow, even ripening with tremendous flavour development at low sugar levels.
Vibrant deep crimson with magenta hues.
Juicy black cherry fruit flavours on the medium bodied palate with spicy white pepper carrying through the layers of fine grained silky tannins.
Ready to drink now, although will gain complexity over the next five to eight years with careful cellaring.
